Comme vous commencez s\u00fbrement \u00e0 le savoir, je suis un grand fan de cuisine italienne, toujours \u00e0 l&rsquo;aff\u00fbt de bonnes adresses \u00e0 vous faire d\u00e9couvrir sur le blog. Quand j&rsquo;ai appris que la toute premi\u00e8re pizzeria parisienne \u00e9tait toujours ouverte et qu&rsquo;il s&rsquo;agissait de \u00ab\u00a0Chez Bartolo\u00a0\u00bb dans le 6\u00e8me arrondissement de Paris, il fallait absolument\u00a0que j&rsquo;y r\u00e9serve une table\u00a0!<\/p>\n<h2 id=\"a-la-decouverte-de-chez-bartolo\">\u00c0 la d\u00e9couverte de \u00ab\u00a0Chez Bartolo\u00a0\u00bb<\/h2>\n<p>Pour vous raconter un peu l&rsquo;histoire de cette pizzeria, Chez Bartolo est la toute premi\u00e8re pizzeria ouverte dans la capitale en 1950. Le restaurant est d\u00e9sormais tenu par Aur\u00e9lie Carron, la petite fille du napolitain \u00e0 l&rsquo;origine de ce restaurant. Quand j&rsquo;ai appris cela, j&rsquo;ai trouv\u00e9 l&rsquo;histoire vraiment\u00a0extra et me sentais vraiment en confiance \ud83d\ude42<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-1828 size-large\" src=\"http:\/\/kevinragonneau.fr\/blog\/wp-content\/uploads\/2016\/09\/IMG_7855-1024x768.jpg\" alt=\"Premi\u00e8re pizzeria fond\u00e9e \u00e0 Paris\" width=\"780\" height=\"585\" \/><\/p>\n<p>&nbsp;<\/p>\n<h2 id=\"une-authentique-pizza-cuite-au-feu-de-bois\">Une authentique pizza cuite au feu de bois<\/h2>\n<p>Cette pizzeria ne cherche\u00a0pas \u00e0 r\u00e9volutionner le monde de la pizza en r\u00e9inventant des recettes o\u00f9 en <a href=\"http:\/\/kevinragonneau.fr\/blog\/manger-a-paris-pizza-wawa-restaurant-italien-a-chatelet\" target=\"_blank\" rel=\"noopener noreferrer\">revisit<\/a><a href=\"http:\/\/kevinragonneau.fr\/blog\/manger-a-paris-pizza-wawa-restaurant-italien-a-chatelet\">ant les classiques<\/a>, mais cherche plut\u00f4t \u00e0 se d\u00e9marquer gr\u00e2ce \u00e0 la qualit\u00e9 d&rsquo;une p\u00e2te pr\u00e9par\u00e9e et laiss\u00e9e \u00e0 reposer dans le respect de la tradition. Celle-ci, ensuite sublim\u00e9e par le geste du pizza\u00efolo puis cuite \u00e0 la perfection assure \u00e0\u00a0la\u00a0pizza une\u00a0p\u00e2te ferme et l\u00e9g\u00e8rement croquante. D&rsquo;ailleurs, pour la petite anecdote, les pizzas sont toujours cuites dans le four \u00e0 bois arriv\u00e9 tout droit de Naples en 1950 !<\/p>\n<h2 id=\"\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-1832 size-large\" src=\"http:\/\/kevinragonneau.fr\/blog\/wp-content\/uploads\/2016\/09\/Paris_Chez-Bartolo_14-1-1024x683.jpg\" alt=\"paris_chez-bartolo_14-1\" width=\"780\" height=\"520\" \/><\/h2>\n<h2 id=\"-2\"><\/h2>\n<h2 id=\"une-carte-qui-nous-fait-redecouvrir-litalie\">Une carte qui nous fait red\u00e9couvrir l&rsquo;Italie<\/h2>\n<p>Leur carte nous fait tout de suite comprendre que nous ne sommes pas seulement dans une pizzeria, mais bel et bien dans un restaurant italien au sens large. Toute la gastronomie du pays y est repr\u00e9sent\u00e9e !<\/p>\n<p>J&rsquo;ai commenc\u00e9 en prenant les \u00ab\u00a0Asperges vertes saut\u00e9es au Parmesan\u00a0\u00bb. Je n&rsquo;ai pas l&rsquo;habitude de voir des asperges en entr\u00e9e de restaurant, et celles-ci \u00e9taient merveilleusement bien pr\u00e9par\u00e9es.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-1827 size-large\" src=\"http:\/\/kevinragonneau.fr\/blog\/wp-content\/uploads\/2016\/09\/IMG_7861-1024x768.jpg\" alt=\"Entr\u00e9es pizzeria Chez Bartolo\" width=\"780\" height=\"585\" \/><\/p>\n<p>Pour le plat, nous voulions\u00a0go\u00fbter au moins l&rsquo;une des pizzas, ainsi qu&rsquo;un risotto.. plat tout aussi typique de l&rsquo;Italie ! Nous avons donc choisi une\u00a0Pizza al gorgonzola <em>(gorgonzola, jambon)\u00a0<\/em>avec un\u00a0Risotto di stagione.<\/p>\n<p>On sent vraiment tout l&rsquo;amour de la bonne cuisine au travers de ces 2 plats qui nous ont r\u00e9gal\u00e9 !<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-1831 size-large\" src=\"http:\/\/kevinragonneau.fr\/blog\/wp-content\/uploads\/2016\/09\/Paris_Chez-Bartolo_22-1024x683.jpg\" alt=\"Pizza feu de bois Paris\" width=\"780\" height=\"520\" \/><\/p>\n<h2 id=\"chez-bartolo-cest-ou\">Chez Bartolo ? C&rsquo;est o\u00f9 ?<\/h2>\n<p>Si vous me demandez une bonne adresse italienne \u00e0 Paris, il y a fort \u00e0 parier pour que je vous cite cette nouvelle d\u00e9couverte dans ma liste !
